Excellent Fried Catfish Recipe

 

Our Excellent Fried Catfish Recipe brings out the full flavor of the fish.

Ingredients (For 1 - 4 Catfish fillets)

Breading:

  • 1 cup corn meal
  • 1/4 cup all purpose flour
  • 1 teaspoon dry ground mustard
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon thyme
  • 1 teaspoon garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon granulated garlic

Preparation:

1. Scale and clean the catfish rinsing it under cool, running water.  Cut the catfish into fillets of approximately 1-1/2 inches each without the skin.

2. Blend all the above ingredients for breading in a separate bowl.

3. Coat the fish fillets thoroughly.

4. Dip the catfish fillets into boiling cooking oil at 350 degrees.

5. Cook until the fillets are flaky, then remove and drain any excess oil.

6. Serve Excellent Catfish Recipe.

Seasonings and Catfish

I think just about every so called fisherman or woman or person who has ever caught their own fish has a seasoning recipe.  I've heard just about every form and format I can think of when it comes to fish.  And when it comes to catfish if your parents came from the South I guarantee you that you will have heard of 4 or five recipes from them alone.  Depending on where they are from the Southern portion of the South or the Northern portion of the South they will or will not use Corn meal or flour or garlic salt.  And don't get me started on the use of hot pepper sauce.  Be it Louisiana style or Tabasco sauce that is a losing battle when it comes to deciding which is best.

One of the lessons I learned when fishing especially for catfish is when asked how many you caught just say one or two.  Never say we caught 8 or 10 as people abhor boasting and basically discount what you say if it is real.  Just keep the numbers to yourself and for goodness sake don't tell anyone how you plan on cooking the fish.  Just say I'll figure out the cooking process once I get them home.  

The overall lesson is that what works for you will most certainly not work for anyone else.  But for those of you that want a general everyday catfish recipe that can be used in a pinch I've added that above.  The recipe uses corn meal and flour.  In addition it uses thyme, garlic salt, black pepper and mustard flour.  The catfish are cleaned and rinsed then dredged in the mix of ingredients.  The frying oil is brought to temperature and the fish is slowly lowered in the oil as it starts to bubble.  The fish is allowed to cook until it starts to rise to the top of the oil.  The fish is then turned over and allowed to continue cooking for about 4 more minutes.  Afterward the fish is removed and placed on paper towels to allow draining of any excess oil.  

An important part of the fish experience is eating the fish when it is relatively hot.  Do not allow the fish to get cold before eating.  After proper draining of the oils you can season the fish with hot sauce if desired.  I like using tartar sauce but to each his own.  So, make this recipe and enjoy the benefits of catfish.
