Herb Stuffed Pork or Flank Steak Recipe

 

Stuffed Flank steak or Pork loin is an exceptional meat that is inexpensive and easy to prepare.

This recipe is simmered with a warm stuffing then served with sour cream gravy.

Ingredients Herb Pork or Flank Steak Recipe:

  • 1/4 cup chopped onion
  • 2 tablespoons butter
  • 2 hard-cooked eggs, chopped
  • 1 cup sour cream
  • 2 cups herb-seasoned croutons
  • 1/2 cup hot water
  • 1 egg, beaten
  • 1 pound flank steak or Pork Tenderloin
  • Jake's California Chicken Rub
  • Pepper
  • 2 tablespoons hot vegetable oil
  • 1/2 cup water

Preparation:

Cook onion in the butter until tender. Stir in chopped eggs, 1/4 cup of the sour cream, croutons, water, and the beaten egg. Pound steak to thin and tenderize; sprinkle with Jake's Chicken Rub formerly Seasoned salt and pepper. Spread stuffing over the meat; roll up from wide edge then skewer to secure. Brown the roll in a large skillet in the hot oil. Add 1/2 cup water, cover, and simmer for 1 1/2 hours, or until tender. Remove meat roll and add enough water to the drippings to make 1/2 cup. Stir in remaining sour cream. Heat just to boiling point; serve with meat.

We named this recipe Herb Stuffed Pork or Herb Stuffed Flank Steak because of the of the meats has similar properties and produces similar results when grilled.  The meats can be easily rolled, stuffed and tied into the desired shape and the grilling works perfectly with either type.  Like a standard Pork Loin the rolled meat is placed on the grill with a medium to medium high heat.  The roll is turned every 10 to 15 minutes until the pork loin or rather the herb stuff pork or flank steak is done.  It's important to grill the pork or flank roll indirectly so as to minimize the heat and subsequent drying that can occur when left on the grill too long.  

Herb Stuff Pork and Flank Steak Showdown

The pork or flank typically cooks up quickly so this is not the sort of meat you want to keep on for 3 or 4 hours.  At best this is an hour's cooking and more likely about 45 to 50 minutes.  Think in terms of how long you would normally cook a beef steak.  A good steak will most likely cook somewhere around 20 to 30 minutes of course if you're using a barbecue grill. If you're broiling or baking the steak as most restaurants do then your overall cook time reduces to about 15 to 20 minutes.  Since most grills achieve no where near the 700 to 800 degrees like restaurant broilers then we'll have to settle for time and heat management to get the job done.  

Each year friends of mine have a contest to determine who is the better cook especially when it comes to pork or flank steak.  We battle back and forth and there is always considerable ribbing before the actual event takes place.  The key to the event is not so much the heat or barbecue unit you use but the way in which the meat is prepared.  This particular recipe has won twice in the last 5 years.  We've have been fortunate to bring home the golden tongs more than once.  So, give this recipe a try and keep and eye on the management of the heat to ensure the results turn out great.
