Cowboy Salsa Caviar Recipe

 

This is a fantastic alternative salsa style recipe made from the most basic of ingredients.

The dish is commonly known as Cowboy Salsa Caviar Recipe.

Ingredients:

  • 1 (15 Ounce) Black Beans drained
  • 1 (15 Ounce) Black Eyed Peas drained
  • 1 (15 Ounce) Diced Tomatoes
  • 2 Cups Frozen Corn thawed
  • 1/4 Green Bell Pepper Diced
  • 1/2 Medium Onion
  • 12 Cup Chopped and Pickled Jalapeno peppers
  • 1/2 Teaspoon Garlic Salt
  • 1 Cup Italian Salad dressing
  • 3/4 Cup Chopped Cilantro

Instructions:

  • 1. Mix beans, peas, tomatoes, corn, onion, bell pepper and jalapeno in a large bowl.
  • 2. Season with Garlic Salt
  • 3. Add dressing and toss
  • 5. Refrigerate for about 20 minutes until the entire contents is chilled through. 
  • 6. Serve

Making Cowboy Salsa Caviar at Home

This salsa or caviar style recipe is called that because it makes a wonderful salsa.  The caviar comes from the smooth rich, slightly salty taste and the name or more of the nick name is for those from the Western part of the country that see this as a substitute for their culturally diverse style of salsa.  No matter what this is called it is a great salsa that uses beans and peas and steps up the flavor with jalapeno peppers.  We chill the mix for about 40 minutes until it is literally freezing before serving.  One thing we will do which was not listed in the recipe is the addition of Avocado.  We slice two halves of an avocado into squares then scoop out the squares and place them in the bowl.  We toss the bowl lightly so as not to break down too much the squares of avocados.  We re-chill the salsa then serve with chips and hot sauce.  

We found for those who may have allergies to tomatoes you can simply remove them from the dish.  The combination of ingredients is quite busy and so not having the tomatoes will not make too much of a difference.  You can substitute a mild hot sauce in place of the tomatoes which should be slightly spicy but very tasty.  

I like to call this an all in dish in that you can switch in and out the things that either you or someone else does not like.  If there's too much of something then just adjust the recipe to suit your taste.  As for the dressing the option is a Cilantro style dressing in place of the Italian style dressing.  I find the Cilantro style will complement the cut cilantro portion but for some it may be a bit too much cilantro.  If you find there's too much cilantro you can eliminate the cut portion or just cut that quantity in half.  One all the subtractions and additions have been made just re-toss the ingredients chill and serve.

Friends of mine will almost exclusively use this dish at their tailgate parties.  They find that the dish is easy to make because it only takes a few cans of ingredients along with some fresh items you keep in your cooler.  Sometimes they will make the salsa the night before but will not add the cut cilantro and tomatoes until the day of the tailgate party.  Once at the event they mix in the cilantro and tomatoes and pour into a bowl.
