Jake's Famous Ball Park Ketchup sauce

The first appearance of tomato ketchup occurred around 1812 when a horticulturalist began mixing tomatoes with brandy, vinegar and sugar.  Ketchup as a successful condiment occurred primarily due to the fact that mixed recipes actually provided a form of preservation with tomato sauces lasting up to a year. 

By the 1900s there was enough evidence to point to chemicals that did help in preservation but were not so good for ones health and additional mixing that would improve the taste.  Finally by the mid 1950s the ketchup formula was settled using ingredients like Corn Syrup and preservatives along with a fair amount of salt to preserve taste and color. 

About 5 years ago Jake's began to take a look at the standard Tomato ingredient listing and that's when we thought we could do better.  We could create a Ball Park ketchup that was built on the lessons learned over the last 100 years.  We could actually remove the Corn Syrup, take out the preservatives, reduce the amount of salt (sodium) and finally improve the flavor with a hint of fennel.  So we did, we created Jake's Famous Ball Park Style.  Our recipe is smooth, tasty and bright with the flavors of red-ripened California tomatoes.

Here's a great recipe we use to make our Famous Ball Park Ketchup Meatloaf

2 lbs ground beef 85% or 90% lean
1 med onion finely chopped
2 large eggs
3 garlic cloves minced
3 Tbsp Jake's Famous Ball Park ketchup
3/4 cup breadcrumbs
1/3 cup milk
1 ½ tsp salt or to taste
1 ½ tsp Italian seasoning
¼ tsp ground black pepper
½ tsp ground paprika
3 Tbsp fresh parsley finely chopped

Blend all meatloaf ingredients together and place is a lightly oiled or buttered pan commonly used for baking bread.  Set oven to 350 degrees and bake for 55 minutes until meatloaf is firm and done.  Now comes the time to make the topping. 

3/4 Cup Jake's Famous Ball Park ketchup
1 ½ tsp white vinegar
½ tsp onion powder
¼ tsp salt
2 ½ Tbsp brown sugar
1 tsp garlic powder
¼ tsp ground black pepper

Blend the ingredients together then spread evenly over the meatloaf.  Place the meatloaf back in the oven and cook for 15 minutes.  Afterward allow the meatloaf to cool for about 15 minutes before serving.
