Our Tri Tip, Steak and Dry Rub produces a delicious crust built on a base of selected coarse ground black pepper, garlic, onion, paprika, brown sugar to deliver a slight sweetness while giving the meat a golden brownish color. Smoked hickory salt, oregano, tarragon and more are added to complement and enhance the marination process.

It's not often I get the chance to do some prospecting for ideas without having to do all the work. On one Saturday afternoon came my opportunity to visit the Santa Maria Elks group who were making what has been called some "legendary" barbecue. Of course the belle of the barbecue was the Tri-Tip roast. Now, I've seen many a tri-tip roast in all the years that we've been making and selling sauces and rubs but these were some of the largest tri-tip I think I've ever seen. The roasts literally had to be manhandled from the butcher block onto the prep area where seasoning and trimming occurred. As for the grilling if you don't know by now Santa Maria is the literal Capitol to the creation of Tri-tip and the Tri-Tip grilling process. And the grills weren't your average Sunday afternoon roll them in and out grills. These were large frame chuck wagon grills of which I can only imagine were brought across with the California settlers in the 1800s these things were massive.
What I saw during the grilling process led me to incorporate into the development and manufacture of two of our most famous BBQ Rubs our Pure Santa Maria and our Tri-Tip, Steak and Rib Rub. Each of these rubs is in a class all by themselves. But what I saw at the Elks event showed me that I was on the right track in terms of flavor profile and managing the flavor of the meat. The Elks held tight to their recipe but I managed to pry loose some information from one of the unsuspecting grill masters. He noted how they use a certain type of salt and coarse ground black pepper. I paid special attention to the garlic profile but noted even as great as the Tri-Tip roast was it lacked a little something in the recipe. That was about the time I realized that if the meat was not very good you could usually pick up the flavor through the use of onion and mustard flour. These two elements vastly improved the flavor of the meat and directly changed the course of the taste. In addition to these wonderful Tri-Tip roasts were some of the largest pieces of garlic bread I've ever seen in my life. You might have heard me say "Texas Sized" garlic bread well these were exactly that. Big slabs of garlic bread loaded with butter and garlic and smoked salt to even up the flavor. And for sides what else...pinquito beans... well it doesn't seem to get any better than that.
I sat back at the picnic tables watching as the pitmasters wheeled their grills into place and lowered and raise the plates over true red oak fire wood it was spectacular. The smell of the red oak combined with the richness of the seasoned tri-tip and the garlic bread and beans this was an awesome time.
