Tri-Tip Roasts are often labeled the "Santa Maria steak". Although especially popular in California - it is now becoming to be better known in other states as well, and is thus increasing its popularity. Tri-Tip is a lean, boneless, economical cut of meat from the round and bottom sirloin of the cattle. It is great grilled, or marinated and then grilled. Tri-tip roasts will vary from 1 1/2 to 2 pounds and are about two inches thick. If a roast is cooked to rare in the center, the thinner outside edges are medium to well, offering perfectly cooked beef for every taste. The tri-tip can be cooked whole or cut into one-inch thick steaks or strips.
Cooking Tri Tip is almost the same as grilling Tri Tip. However, there are a few key steps to remember when cooking Tri-Tip in the oven. With grilling it is very easy to achieve a golden brown crusted finish on the Tri Tip. The oven cooking process requires some additional steps to achieve a crusted outer layer. Season your Tri-Tip with Jake's Tri-Tip, Steak and Rib Rub as you normally would. Allow Jake's BBQ Dry Rub to marinate on the Tri-Tip no less than 45 minutes before grilling. Preheat the oven to 325 degrees. Gather a large cooking pan which will be used in the oven. At this point you can decide if you want to place the Tri Tip directly in the pan or you can add aluminum foil to the inside of the pan to aid in clean up and to catch juices. Using the foil is good and bad in that while it will minimize cleanup it will actually reduce the Tri Tips ability to achieve a golden brown surface. If you choose to wrap your Tri Tip before putting it in the pan you will need to cook the Tri Tip just like the grilling process. With this recipe we will be using a slow roasting technique. After the oven has been preheated place the cooking pan with the Tri Tip in the oven. Turn the heat down to 275 degrees which is the temperature we will use for the remainder of cooking. With the meat cooking you can will allow it to continue undisturbed for 30 minutes before checking the temperature. If you know your oven and the temperature reading on the dial is exactly what it is in the oven then you will only need to check the Tri Tip after 1 hour.
