Catfish Fry Ingredients:
- 5-6 Catfish fillets
- 8 Tablespoon Yellow corn meal
- 2 Tablespoon Garlic Salt
- 2 Tablespoons Black Pepper
- 2 Cups Canola, Sunflower or Vegetable Oil as desired
- ¼ Cup Jake's Southwestern Hickory Dry Rub (BUY NOW!)
- 1 Medium to Large freezer bag
Place oil in medium sized saucepan. Heat Oil over medium heat. Wash and pat dry catfish fillets with paper towel. Slice into sections approximately 2-3 inches wide. Place fillets into freezer bag. Add Jake's Southwestern Hickory Dry Rub, Yellow Corn mean, Garlic salt, and Pepper (As an added extra place corn meal in a blender and blend until the meal is a fine powder. This will improve the delivery of the spices and give you restaurant quality Catfish). Seal bag tightly. Shake until all fillets are completely coated. After oil reaches approximately 350-375 degrees place coated fillets into the oil and cover with lid. Check condition of cooking every 5 minutes. Cook fillets until oil reaches a golden brown color. Remove fillets and drain. Let sit for 1-3 minutes.

Our Catfish Journey
Catfish has long been a practical staple in my parents household. My Dad obsesses over his catfish catch and lords it over his friends each time he goes out and makes a haul. He never seems to mention the days when is hooks are empty though. My Dad is one of those fishermen that has an odd regimen when it comes to fishing. We've never been able to tell if he actually enjoys the fishing part or the catching part. His hours are spent trolling to an fro along the banks of the lakes and streams he visits. I've actually experienced them driving over 150 miles to my house for a fishing trip. We head out to an area fishing spot then spend 6 hours toiling to make a catch. At the end of the trip he ties up his fish and never even thinks about offering some of the catch to me even after staying at my home. After a couple of fishing trips with them I learned that it's best to do my fishing alone or at least with someone that's closer to my age.
But no matter their visits and the obvious fish obsession when we did actually do a fish fry we always used our Jake's Famous Southwestern Hickory Dry Rub seasoning. This is a great seasoning with a nice bit of spiciness from the chili powder and the cayenne. The BBQ rub is rounded out by the Hungarian Paprika and the smoked salts and garlic. The flavors are amazing especially when the fish is hot and just out of the
oil. But you're probably wondering just how do we use the seasoning in the mix. Well, when we gather our garlic, flour, onion powder and other special seasonings we blend in about 3 tablespoons of our Southwestern Hickory seasonings. We get that nice and mixed in and dredge the fish just like we would if we have an egg wash mix. The fish is then allowed to rest for a couple of minutes to ensure the oil is hot about 350 degrees then we slowly allow the fish to dive into the oil. The fish is boiling immediately at that point. We find if we do not have a controlled cooking fryer we will adjust the temperature up on the oil by about 10 degrees. And while the fish is cooking once it begins to rise to the top of the oil we turn the oil temperature down about 10 degrees so as not to overcook or burn the fish. With the fish done we take it out and drain it onto paper towels. We collect all the finished fish and add tarter sauce, hot sauce and ketchup.
Bonus: Buffalo Catfish Bits
Buffalo Catfish Bits are incredibly tasty and easy to make with Jake's Famous Buffalo Cheese Wing Sauce. We thought we would add a nice bonus for anyone that enjoys Catfish as much as we do.
Recipe Buffalo Catfish Bits:
- 2 Catfish Fillets at room temperature
- 3/4 Cup Fine Corn Meal
- 1 teaspoon Paprika
- 1 teaspoon Garlic Powder
- 1 teaspoon Fine Black or White Pepper
- 1 Cup of Milk
- 1/2 teaspoon Table Salt
- Peanut or Vegetable Oil for Frying
- 1/2 Cup Jake's Famous Buffalo Cheese Wing Sauce
Mix Corn Meal, Salt, Paprika, Garlic Powder, Pepper,and Milk together to make a dredge. Cut Catfish into sections about 1 to 2 inches long each. Dip Catfish bits so that all sides are covered with the mix. Heat oil to 360 degrees. Once oil reaches temperature slowly lower the Catfish bits into the oil to reduce spatter. Cook for 7 to 8 minutes until batter is golden brown and fish is done. Remove fish and place on paper towel for drainage.
Take the 1/2 Cup of Jake's Famous Buffalo Cheese Wing Sauce and place in a metal bowl or similar large enough to hold all the fish bits. When fish has drained remove from the paper towel and toss in Jake's Buffalo Cheese Wing Sauce. After all bits have been coated remove from the bowl and place on a serving dish. Add blue cheese dressing on the side and celery sticks to compliment.
Serve Buffalo Catfish Bits with celery, Jake's Buffalo Wing Sauce and chips or fries.
