Wonderful levels of sweet and tangy flavor trademark this dish.
We are providing two things on this post. The first being a great pork tenderloin recipe and the second being an answer to the burning question of...how long do you grill pork tenderloin? So, let's first get to that recipe.
Ingredients:
- 1 Pork Tenderloin (4 to 6 Lbs)
- 3 Tablespoons Yellow Table Mustard
- 4 Tablespoons Jake's Tri-Tip, Steak and Rib Rub
- 1 Clove fresh Garlic
- 3 Ounces of Apple Juice
- 1 Roll Aluminum Foil
- 8 Hours of Marinating Time
Directions:
Wash and pat dry your pork loin in water. Stretch out at least 14-16 inches of aluminum foil on a clean flat surface. Rub the yellow mustard over the outside of the entire loin. Sprinkle Jake's Tri-Tip, Steak and Rib Rub over the entire loin. Press the dry rub into the loin. Cut 1 inch slits into the loin in different locations. Peel the garlic segments and insert one segment per slit. Wrap the coated loin in the aluminum foil and let rest in your refrigerator overnight. After the resting period prepare the smoker or grill unit bringing the temperature to 225 degrees.
Place the pork loin on the grate over the grate and close the lid of the smoker or grill. After 1 hour remove the loin and spray or coat with Apple Juice. Bring the temperature of the smoker or grill to 400 degrees. Place the loin back on the grill or smoker until the internal temperature reaches 145 degrees. Remove the loin and wrap in aluminum foil and let rest for 30 minutes. When finished plate the pork loin and slice.
Definitive Cooking times for Pork Loin per pound.
Each time we discuss Pork Loin and Pork Tenderloin we always focus on the size of the pork tenderloin. We've had lots of interest in just getting to the quick answer, is it 10 minutes, 30 minutes, 55 minutes or more. But in all reality you really want to focus on the size of your Pork Tenderloin. So, we'll divide the cooking times into sections listed below:
- 1-2 Lb Pork Tenderloin 25 - 30 Minutes
- 2-3 Lb Pork Tenderloin 30 - 45 Minutes
- 3-4 Lb Pork Tenderloin 50 - 65 Minutes
- 4 or More Lb Tenderloin 65 - 80 Minutes
We've indicated before in other posts that a 1-3 pound pork tenderloin will require about 25 - 35 minutes to cook. The of course depends on the level of heat applied and whether the meat had been marinated or was cold before starting it on the grill. With a smaller loin you can expect the meat to cook for less time. We try to focus on the weight of the pork loin in relationship to the heat applied. One thing to focus on is the desired end result. No one wants a loin that is dry and overcooked. Also no one wants a tenderloin that is undercooked due to concerns about salmonella and bacterial illnesses. So, we'd like to finish the cooking process somewhere around 165 degrees. The FDA considers the meat safe when it reaches that temperature. As for heat level the ideal heat is around 250 to 275 Degrees where the meat is cooked indirectly. The indirect cooking will allow the meat to roast with the flavors being melded into the meat.
Now with the meat grilled it's important to properly finish the meat. The meat must be rested to allow the Maillard effect to drawn the liquids back into the meat to keep in juices. After resting for a minimum of 10 minutes your Pork Tenderloin is ready for serving.
