Yukon Gold Parmesan Roasted Potatoes Recipe

 

Yukon Gold Parmesan Roasted Potatoes

This is a quick and easy recipe taking about 25 minutes to produce fantastic Parmesan potatoes for any meal. 

Ingredients:

  • 6-8 Yukon Gold Potatoes
  • 1 Tablespoon Oregano
  • 1 Tablespoon Garlic Salt
  • 1 Tablespoon Black Pepper
  • 1 Tablespoon Parsley
  • 1 Tablespoon Rosemary
  • 1/4 Cup Extra Virgin Olive Oil 
  • 3 Tablespoon Parmesan Cheese shredded 

Steps:

Wash and slice Yukon potatoes into 1/4 inch slices. Filling a small cooking pot 3/4 full of warm water. Bring the water to a rolling boil. Add the sliced potatoes and boil for 10 minutes. Note, the potatoes will not be cooked through when finished but will be softened.

Mix the Oregano, Garlic Salt, Black Pepper, Parsley, Rosemary and Extra Virgin Olive Oil together in a mixing bowl and hold aside.

After 10 minutes of boiling lower the heat and remove the potatoes by draining off the water. Once water is removed place the potatoes in the mixing bowl containing the oil and seasonings. Toss in the bowl for 2 minutes to ensure that all of the potatoes are coated with the oil and seasonings.

Bring out a flat metal baking pan. Add aluminum foil to coat the pan. Turn your oven to 400 degrees to preheat. When the oven is preheated add the seasoned potatoes to the aluminum foil. Place the pan in the oven and allow the potatoes to roast for 15 minutes.

Remove the potatoes and turn the oven to broil. While the potatoes are out coat the potatoes with the Parmesan Cheese. Place the pan bake the oven and broil for 3 to 5 minutes until potatoes are golden brown.

Remove the pan and allow the potatoes to cool for 2 minutes.

Yukon Potatoes and Preparations

Yukon potatoes and lovely rosemary herbs layered on with garlic, black pepper, oregano, garlic salt, in virgin olive oil and topped with Parmesan shredded cheese.  This is an awesome use of some really great potatoes.  I use this Yukon potato meal when I cater for clients.  The ingredients are easy to prep and the results are always fantastic.  Potatoes unlike meats are something that you really don't want to marinate in advance due to their exposure to air and the fact that they can change their overall appearance to be darker and less desirable.  The other side of this is that you want the potatoes to be as fresh as you can possibly get them.  If they must be prepared in advance you can at least take the potatoes and place the sliced sections in cold water.  The water will keep the slices from turning dark.  You should also wash the potatoes separately to remove the starch. Once done then place them in cold water for preserving until you actually need them.  

I've also found that we can use a quick broiler to get similar results as an oven.  A way to shorten the cooking process is to scoop out some of the insides of the potatoes then put those in the oven / broiler.  This should cut your cooking time down by 10 to 15 minutes.  

In addition to the ingredients used and the Parmesan cheese I hold on the side Sour Cream.  I use the Sour Cream as an incredible topping and for my clients I sprinkle on a little Hungarian Paprika to pick up the flavor of the sour cream and to make the potatoes more presentable.
