Of all the basic meat forms steak practically tops the list at longevity and is hailed the world over as the form of meat most would like to eat on a regular basis. Steak can be relatively inexpensive or extremely expensive in forms such as "Wagyu or marbled roasts" each of these costing at a minimum $100 per pound. Most people buy them because they understand true behind a great steak is the amount of marbling or fat content necessary to create this almost buttery notion of meat with very little if any chewing texture. Just excellent mouth feel and wonderful notes and aromas of wonderful flavor. We seasoned our steaks with our Jakes Famous Tri-Tip, Steak and Rib Natural Dry Rub then we followed and exceptionally simple process of grilling and roasting to produce the maximum amount of flavor from the steak. We believe the best flavor is produced when the steak is allowed to marinate in the seasonings for at least an hour. The steaks after seasoning are covered and placed in a fridge on a middle shelf during the marination process.

To achieve the grilling process we like using wood fire (Red Oak) or Charcoal with smoking chips. If using smoking chips make sure you soak the chips in water for at least 2 hours.

Then put a handful of chips on the coals or in a smoke box once you have reached the right temperature for grilling. If I can't use a grill then I use a cast iron pan on high heat. I season the pan with a little butter first. But prior to grilling the steak I allow it to rest at room temperature for at least 30 minutes. Once the steak is seasoned and rested I bring my oven to 450 degrees for at least 20 minutes. I add the butter to the pan followed by the steak which is seared for 5 minutes on the first side. I add garlic cloves and rosemary to the pan following the point at which I turn the steak over. I sear the steak for an additional 4 minutes then I remove the steak from the stove top then I move the steak to the oven for 5 minutes. I remove the steak from the cast iron pan and place it on a rack to hold the steak for at least 5-8 minutes before I start the serving process. At that point the steak has reached a perfect medium rare to medium. I slice the entire steak serving sections to guests. Along with the steak I add the garlic into mashed potatoes and either roasted asparagus or broccoli.

Should I desire to add barbecue sauce to the steaks during the grilling or cooking process I generally do that before I add the pan to the oven. I baste the steak with our Really Good Mild BBQ Sauce then I continue with the placement of the pan in the oven. I note that the addition of the BBQ sauce will add an additional minute or two to the cooking process so I adjust the time accordingly. I will use a timer when cooking in the oven so that I don't guess at the finishing time. By doing so I will ensure that my cooking process is consistent each time. I can offset the additional two minutes needed to cook the steak by warming the BBQ sauce beforehand on the stove. To do so simply add the sauce to a pot or container and bring the sauce to a pot on medium heat. One the sauce begins to boil remove it and let rest for one minute then baste the steak

Ingredients Needed:

Jake's Dry Rubs Tri Tip Steak and Rib Rub

Charcoal Grill

Charcoal Briquettes

Red Oak Firewood soaked for 20 minutes in water

Sharp Knife

Plastic bags or sealed container

 

After resting cutting the meat the right way is critical.  Place the meat on the cutting board and with a sharp knife you'll want to slice off sections that are at least 1/4 inch wide.  Another critical thing is direction for cutting the meat.  You'll want to ensure that you cut perpendicular to the grain of the meat.  The best way to describe it is if you stretch out your hand so that all your fingers are together then place your other hand on top so that your palm is facing you and it rests on all the knuckles.  If this was a knife this would be considered perpendicular.  The same applies to the meat because of where the meat originally comes from there is a degree of musculature that runs within the meat.  Cutting in a perpendicular fashion opposite of the grain of the meat will allow the meat to chew to perfection.  If you cut the meat with the grain where you'll be able to see lines formed in the meat the meat will be chewy so all that hard work will be for not.
