Potato Skins Crispy Appetizer Recipe

 

Crispy appetizer potato skins

Potatoes filled with melted cheddar cheese, and topped with bacon bits, sour cream and chives are a wonderful treat for the game or just for fun.

These potato skins easy to make. One key to making them crispy is to bake the skins at a high enough heat so that outside is golden brown and crisp enough to hold the toppings.

Ingredients Potato Skins Recipe

  • 6 small to medium sized russet baking potatoes (total 3 pounds)
  • 2 Tbsp butter melted
  • 2 tsp Jake's Tri-Tip, Steak and Rib Rub
  • 3 Tbsp grated parmesan cheese
  • 1-1/2 Cups shredded cheddar cheese
  • 6 strips of bacon
  • 3/4 cup sour cream
  • 2 Tsp fresh chives or green onions

Steps To Make Potato Skins Recipe

1. Scrub the potatoes clean then lightly grease outside of potatoes, cut small slit into top and bake at 425 degrees for 45 minutes or until soft. Let stand until cool enough to handle, about 15 minutes.

2. Cut potatoes in half lengthwise and scoop out cooked potato, leaving a very thin layer of potato inside. (Save cooked potato for mashed potatoes or hash browns).

3. Brush outside and inside of skins with melted butter. Sprinkle inside with Jake's Tri-Tip, Steak and Rib Rub seasonings and parmesan cheese. Place on lightly greased baking sheet. Bake 8 minutes or until crisp and bubbly.

4. Fill with cheddar cheese and bacon bits. Bake an additional 3 minutes or until cheese is melted.

5. Top each with a scoop of sour cream and sprinkle on chives.

Bonus:  Alternate Potato Skin Recipes

INGREDIENTS

  • 6-8 small to medium sized russet baking potatoes 
  • Extra virgin olive oil
  • Freshly ground pepper
  • 6 strips of bacon
  • 4 ounces grated cheddar cheese
  • 2/3 cup sour cream
  • 1 Teaspoon Kosher salt
  • 2 green onions, thinly sliced, including the greens of the onions

INGREDIENTS

  8 russet potatoes

  • 2 Tablespoons olive oil
  • 2 Tablespoons butter melted
  • 1/2 teaspoon dried Italian seasoning
  • salt to taste
  • 1-1/2 cup grated cheddar cheese
  • 8 slices bacon cooked crisp and crumbled
  • 2 green onions sliced
  • 1/2 cup sour cream

Each of these alternates is a great recipe that can be made easily.  And for a completely unique experience why not opt to use Sweet Potatoes in place of Russet or Yukon Gold potatoes.  

In fact we decided to try to suggestion above using Sweet potatoes in place of russets or Yukon gold potatoes.  We had good success by using the options.  The skins of the sweet potatoes are obviously different and the insides of the sweet potatoes will take more time in the cooking process that standard russet or Yukon.  But don't let the extra time discourage you, the end result will be this wonderfully flavored sweet potato.  Keep in mind that you most likely won't need things like the Italian seasoning or maybe not as much sour cream.  But the cheese and the onions were great for the sweet potatoes.  The olive oil and the butter was a nice complement for the potatoes.  We made it a little more interesting by adding in a splash of really good Balsamic Vinegar.  Once complete the potatoes were the hit of our gathering.
