In our quest to build bigger and better BBQ Rub to meet the needs of our demanding customers we created the Chipotle Dry Rub for sale. This is the 4th in our series of barbecue rubs for sale and is an absolute wonder. The essence of our Best Chipotle natural Dry Rub is the Chipotle pepper which is blended from the heart of the Jalapeno plant that is then smoked, and dried then ground into a fine powder which is then renamed as Chipotle Pepper Powder. The Chipotle pepper is the finest example Jalapeno peppers that are aged to peak flavor and naturally smoked to preserve its richness and freshness.
When blended with key spices the peppers exhibit a subtle almost sweet heat. Jalapenos were smoked because of their thick skin and dried to preserve their life and flavors. We recommend using it on a freshly cut steak by adding about 2 tablespoons of the dry rub shaken on both sides. The steak is then allowed to marinate in the rub for about 30 minutes then grilled on high heat turning once or twice until done. Let the steak rest for a minute or two then serve. On Chicken the rub is taken and placed under the skin of the chicken if grilling whole chicken then shook on the outer skin and allowed to marinate on the chicken. We prefer a preparation step of taking standard yellow mustard which is then coated on the whole of the chicken then the chicken is allowed to rest for about 2 hours before the dry rub is added.
After the marination process, we follow by shaking on the dry rub which will adhere to the chicken better when the marinade is added. Allow the chicken to marinate with the rub and mustard for at least two hours before grilling. We like to smoke the chicken if possible. If smoking is not possible grill indirectly at about 275 to 280 degrees for about 2 hours. Check that the thigh an breast area are at least 170 degrees before removing the chicken. With chicken it's best to check FDA guides to ensure that your chicken is done before serving.

The process of making tri tip is actually very easy, it just requires some steps to achieve the desired result. We like to make tri tip following the common style used on the central coast of California. We use a smoking process that involves red oak firewood in the smoke process. Here's how we do it. We take a tri tip roast and trim away any fat that exists. We keep a very thin layer of fat which remains and when properly grilled melts into the meat as flavor. First we take the tri tip at as near room temperature as we can get it we coat the meat completely with yellow mustard. Tri tip is a dense meat and while we can't expect the tri tip to reach the center of the meat we can expect it to change some of the outer properties of the meat in preparation for the bbq dry rub. We allow the yellow mustard to rest on the meat for at least 2 hours. Afterward, we add our Best Chipotle BBQ Rub. We coat the tri-tip generously then we place the roast in a plastic bag followed by placing into the refrigerator. We allow the rub and mustard mix to rest on the meat for another 2 hours.
We prepare our grill by the standard indirect method which is having charcoal on one side and making a place for the meat on the other. Now comes a decision point for the griller. There are two schools of thought about searing. One which we are most familiar with says that before the cooking process you should sear the meat for at least 4 to 6 minutes per side then move the meat to the indirect part of the grill. The second method says that you should cook the meat at the desired indirect temperature than at the very end of the cooking cycle place the meat on the hottest part of the grill to sear for about 2 to 3 minutes per side. We've tried both and we find that if you follow method 2 its usually done when our coals have just about run out. So getting the desired sear temperature can be a bit hard at this point. The other thing about method two is really managing the temperature of the meat so as not to add too much heat at the end. Basically, you start out with a desire for medium rare and end up with medium well if you're not mindful of the timing.
As for flavor change, we did not notice a significant change in the flavor profile of the meat. We did notice that more of the rub was left on the meat in method 2. We think it's really up to the griller to decide what's best when grilling your tri-tip. One note on temperature, tri tip is best when it's finished at medium rare or medium well. Also be sure to cut the meat perpendicular to the noticeable grain. If you cut with the grain the meat will be tough and chewy.
How about making ribs and hamburgers? The process is simple just add 1 teaspoon of our California Chipotle BBQ Rub per burger then mix thoroughly. Form the burger into a patty ready for the grill. We like to add 1/2 teaspoon of yellow mustard to add the peak of flavor and tartness to the meat. Natural ingredients make the spices easier to adhere and marinate with almost any meat.
