Grilled Trout with Shallots Recipe

 

One of the few great things in life is properly prepared and grilled trout with shallots.

Here's a recipe for a whole grilled trout.

  • Trout Ingredients:
  • 1 Whole rainbow trout
  • 3/4 cup of seasonal mushrooms (Oyster, or shiitake mushrooms)
  • 2 Tbsp extra virgin olive oil
  • 2 Shallots
  • 1 Tbsp Jake's Famous Pure Santa Maria Dry Rub
  • 2 teaspoon table salt
  • 1 teaspoon pepper
  • 1/2 Bunch fresh thyme
  • 3 Ft Twine

Directions:

Open the trout and sprinkle with 1/2 teaspoon salt, 1 Tbsp Jake's Pure Santa Maria Dry Rub, 1/2 teaspoon pepper and add fresh thyme. Combine thinly sliced mushrooms, shallots, salt, 1/2 teaspoon pepper and olive oil in a pan to sauté. Place sautéed mushrooms inside the trout. Tie the trout with twine, brush with extra virgin olive oil, salt and pepper. Prepare grill and have ready at medium heat at least 300 degrees and grill for four minutes each side.

When complete move the trout to a single plate, let rest for 3 minutes then remove twine. Cut as required and serve.

Fishing for Trout the experience

Over the years I've watched a lot of shows about some fisherman or woman heading out to the forest wilds in search of the elusive spotted or speckled or golden or rainbow trout.  The expeditions were always interesting and each had its own degree of peril to get that one famous shot of the most special fish they've ever caught.  And what we learned from that is as if anyone else doesn't know fishing on TV is nowhere near the experience of actually doing it.  The best that TV can do is help spur the idea of getting out there and doing it on your own.  Now I'm not the guy that gets on a boat and goes 50 miles off shore to fish for tuna or marlin or whatever else is out there but I do enjoy a trip to the solitude of the forest streams and lakes that are teaming with somewhat elusive trout no matter the type.  

So for this recipe on trout we'll assume that you got your hands on some fresh trout no matter how it came to be.  Trout is somewhat delicate and can be very tasty when properly cooked.  I find trout to be somewhat bony with lots of very tiny bones that you need to careful about when eating.  But the flavor of trout is very good.  I've seen many load up a pan with butter and garlic salt then score their fish on the outside afterward seasoning their fish and frying it in the butter and garlic salt.  Sometimes they will shake on a seasoning just before tossing the fish in the grilling pan.  

Our recipe is one that can be done on your home grill or in your oven.  You blend the ingredients, stuff the fish, wrap it with twine to hold the fish together then grill the fish or bake it until the fish is done.  The fish is then allowed to rest for a few minutes and the twine remove and plated with a nice garnish and vegetables for presentation.  

Although a little bit of work in the process the trout fish comes out nice and flaky with an excellent seasoning.  Give this recipe a try.
