A can't miss recipe that will make you a stunning dish from crowned or French style ribs. The ribs can be smoked or grilled or best of all baked in the oven to reduce hassle and the mess of clean up with minimal marinating.
Start your oven bringing it to 260 degrees F. To enhance the flavor or the ribs we will be using hickory wood chips. Wood chips can be used in the oven, you will need an aluminum covered metal container that can withstand high temperatures for long periods of time. You'll place the pre-moistened chips into the container and put it in contact with the bottom of the oven or where the most heat is generated. If you have a gas oven and the bottom pan covers the gas burners place the aluminum basket directly in contact with the pan.
After the ribs have marinated set the ribs in a roasting pan that has been covered with aluminum foil. Place the ribs so that they are standing in a ring with the meaty side facing inward. Place the roasting pan in the oven and allow the ribs to roast for 40 minutes. Baste the ribs with any liquids from the meat about 30 minutes into the cooking cycle. Continue cooking until the thickest portion of the meat reaches a minimum of 170 degrees F. Remove the ribs and let rest for 5-8 minutes. Serve.
Start your smoker bringing it to 260 degrees F. To enhance the flavor or the ribs we will be using hickory wood chips. For your smoker use pre-moistened wood chips and sprinkle on the charcoal to create immediate wood smoke.
Coat the ribs with standard yellow mustard. Let the ribs rest with the mustard on for 40 minutes at room temperature. Follow by sprinkling the ribs with Jake's Tri Tip, Steak and Rib Rub then allow the meat to rest for 40 more minutes. Poke two holes behind the first bone on both sides of the rack of ribs. Use parcel twine to loop into the holes tying the ribs together in a circular pattern with the bottom side or the ribs outward. After resting place the ribs on the grilling grate and smoke the ribs for 2-1/2 to 3 hours. Ensure that the thickest portion of the ribs reach a minimum temperature of 170 degrees F. Afterward remove the ribs from the smoker and allow them to rest for 5-8 minutes. Serve.
Ribs can be plated and the center portion filled with bread stuffing or roasted vegetables.
