Chipotle Baby Back Ribs are perfect any time with subtle amounts of sweet heat Chipotle, and the smooth richness of honey.
Ingredients Chipotle Honey Sauce for Barbecue Ribs Recipe
- 1 Tablespoon Jake's Chipotle Dry Rub
- 1/4 cup honey
- 3 to 4 tablespoons Worcestershire sauce
- 2 teaspoons crushed red pepper flakes
- 1/4 cup orange juice
- 1 Rack of Baby Back Ribs
Combine all ingredients in a small pot or bowl then heat on medium for 3 minutes stirring thoroughly. Remove from heat and let rest until almost cool.
Take rack of ribs and remove any membrane on the underside of the ribs. Wash rack thoroughly and cut in half, then pat dry. Take large resealable plastic bag and place the two halves of the rib rack into the bag. Pour 3/4 of the Chipotle Honey Sauce mixture into the bag coating the ribs. Seal the bag removing any excess air. Turn the bag over coating the entire surface of both rib segments with the mixture. After the ribs are coated place the bag into the refrigerator and let rest for 2 hours.
Once the ribs have rested prepare your grill. Remove the rack of ribs from the bag and grill as normal. Start by grilling the ribs underside down first, then following by turning the ribs over. Check the temperature and turn every 15 minutes. Base the top side of the ribs with the reserved Chipotle Honey Sauce mixture. Once the ribs reach the desired temperature remove from heat and brush on one additional layer of Chipotle Honey Sauce on all surfaces. When ribs are cooked serve with the reserved Honey sauce mixture.

After 15 minutes open the lid and turn the marinated ribs over then let cook for 18 minutes. After 18 minutes check the temperature. We added 3 minutes to the cooking process to account for the heat loss during the opening and closing of the grill. After each subsequent turning check the temperature using an instant read thermometer.
As the ribs near temperature begin consulting the cooking scale to ensure that you bring the ribs out at the right temperature. It's best to consider checking on the ribs every 30 to 45 minutes. There are few ways to determine if your ribs are done especially if you do not have a temperature gauge. One of the best ways of determining doneness without a thermometer is by visual inspection. Ribs will have a very noticeable draw or pull back from the bones sometimes 1 to 2 inches. As the meat clears the bones the liquid is cooked out and the meat becomes more done. A second way is by testing the flexibility of the ribs when lifted. If the meat flexes less that it did when originally started on the grill then there's a big bet that the ribs are done. And a third way of ensuring doneness is by simply pulling the ribs apart slightly to determine the color of the meat inside. If the meat is not pink but reddish with a nice smoke ring the ribs are done.
Consider resting the ribs to achieve maximum flavor and to ensure that the juiciness of the ribs is maintained. We like resting the ribs for at least 15-20 minutes before serving.
