Ingredients

  • 1/4 C Jake's Original Bar-B-Que Sauce***
  • 1/4 C Butter
    2 Medium Onions, minced
  • 3/4 C Bourbon (**Inexpensive is fine and optional, you can substitute something else with similar flavoring if desired)
  • 2/3 C Ketchup
  • 1/2 C Cider Vinegar
  • 1/2 C Fresh Orange Juice
  • 1/2 C Maple Syrup
  • 1/3 C Dark Un-sulphured Molasses
  • 2 T Worcestershire Sauce
  • 1/2 t Freshly Ground Black Pepper
  • 1 t Salt
  • 8 uncooked large shrimp, peeled, de-veined

**Bourbon substitutes include Non-alcoholic vanilla extract. Champagne and other sparkling wines: Sparkling apple cider; sparkling cranberry juice; or sparkling grape juice. Sparking apple cider or vanilla extract is the better substitute in creating the same or similar flavors of alcoholic items.

Steps and Instructions:

1. In a large saucepan melt the butter with the oil over medium heat.

2. Add the Onions and sauté for 5 minutes, cooking until they begin to turn golden.

3. Complete the process by joining the remaining ingredients into the pan; bring the heat to a low level and allow the glaze mixture to thicken for about 30 minutes or so, stirring frequently.

Once the glaze thickens you can use on practically any meat or vegetables.  Once used you can store the glaze until needed.  To reuse warm on the stove over medium heat until the glaze thins and is usable.

Shrimp Grilling

After the shrimp is peeled and cleaned place in container and cover with Bourbon Glaze grilled shrimp marinade and let marinate for 30 minutes. Once marinated place shrimp on prepared grill 3 to 4 inches above a moderately hot fire. Brush the shrimp lightly with the Bourbon Glaze marinade, and cook until pink and done.

Reserve some of the BBQ Shrimp Bourbon Glaze as a dipping sauce at the table.

Remove and Serve.

Shrimp in Bourbon Glaze
This is another awesome recipe that we created a number of years back.  We wanted to showcase our Bourbon Glaze recipe along with our Bourbon BBQ Sauce and our Jake's Famous Really Good Mild BBQ Sauce.  The recipe takes into account the natural flavors exhibited by each of the original creations then melds them together to create this wonderfully tasty barbecue sauce type of glaze.  Most glazes as you know are really the reductions of the original sauces when held over the fire for longer periods as the moisture is cooked out of the sauce.  We have some friends who can't tolerate the actual use of Bourbon or Alcohol which is why we created some great substitutes like sparkling ciders, and sparkling wines or cranberry and apple juices.  In some cases Vanilla Extract is a reasonable substitute in place of alcohol.

We found that if we marinate the shrimp for about an hour and no longer then the results of the meal would be greatly enhanced.  We did not want the shrimp to become mushy from overmarinating.  Also we made sure to keep the shrimp cool especially when de-veining the shrimp and just before we placed them on the grill for cooking.

Be sure to keep some of the marinade separate from that you use to marinate the shrimp.  The extra marinade will be used as a dipping sauce.  But it is very important not to have any cross contamination from the marinated shrimp and the dipping sauce.  Separate the two and keep in different locations.

Along with the marinated shrimp we like to have some steam vegetables, mashed potatoes, or a really nice salad.  The end results are always great whenever we make this dish.  I'm sure you will enjoy it as well.
