Hot Buffalo Wings Recipe

 

The perfect way to make My Hot Buffalo Wings Recipe spiced up with Jake's Really Hot formerly Inferno Sauce!

Following these steps should yield a serving size of 6, main-course servings of delicious barbecued chicken wings.

For blue-cheese dressing
1/2 cup mayonnaise

1/4 cup plain yogurt

2 ounces crumbled blue cheese (about 1/2 cup)

4 celery ribs

3 pounds chicken wings (12 to 14)

2 tablespoons vegetable oil (if grilling) or 6 cups vegetable oil (if deep-frying)

1/2 stick (1/4 cup) unsalted butter

3 to 4 tablespoons hot sauce such as Frank's or Goya

3 to 4 tablespoons Jake's Really Hot formerly Inferno Barbecue Sauce (BUY NOW!)

1 1/2 tablespoons cider vinegar

Optional Recipe:

60 grams Louisiana Hot Sauce

5 grams powdered Butter Flavor

2 grams Powdered Garlic

 

Blend Mix together and simmer on stove for 10 minutes. Follow directions to cook chicken below then toss in above sauce. 

Make dressing:
In a bowl whisk together mayonnaise and yogurt and stir in blue cheese (dressing will not be smooth). Dressing may be made 8 hours ahead and chilled, covered. Cut celery into thin sticks. Soak celery in a bowl of ice and cold water at least 30 minutes and up to 1 hour.

Cut off barbecue chicken Hot wing tips, reserving for another use, and halve chicken wings at joint.

To grill barbecue wings:
Preheat grill.

Pat barbecue wings dry. In a bowl rub 2 tablespoons oil onto wings and season with salt. Grill wings on an oiled rack set 5 to 6 inches over glowing coals until cooked through and golden brown, 8 to 10 minutes on each side.

To deep-fry barbecue wings:
In a large (5- to 6-quart) deep heavy kettle heat 6 cups oil until a deep-fat thermometer registers 380° F. Just before oil reaches 380°F, pat dry 6 or 7 wings. Carefully lower wings into oil and fry, stirring occasionally, until cooked through, golden, and crisp, 5 to 8 minutes. With a slotted spoon transfer wings to paper towels to drain. Pat dry and fry remaining wings in same manner, returning oil to 380°F between batches.

In a large skillet melt butter over moderately low heat and stir in Jake's Really Hot formerly Inferno Barbecue Sauce, vinegar, and salt to taste. Add grilled or fried wings and toss to coat.

Serve Hot Buffalo Wings Recipe warm or at room temperature with dressing and celery sticks.

Each year we have a group gathering that sets out to out do themselves when it comes to making Buffalo Hot Wings.  They set up tables, have large mural type displays and there's a fair amount of goading each other on about their ability of inability to make a quality wing.  Sometimes you have to keep an eye on the contestants as they may sabotage their co-contestants by turning down the heat on their oil or changing their sauce bottles out for something with a little less heat.  The whole event is built on fun and a little tom foolery which overall is a fun thing.  We've been awarded the golden wing trophy more than once with our creamy buffalo wing recipe but have backed off in recent years to allow some of the other their one chance in the spotlight.  I will say that the one thing I didn't like one year was a contestant who decided to use licorice in their recipe.  I normally like anything with licorice but to use it in a Hot Wing recipe was just sacrilege.  Long life the Buffalo Hot Wing!
