Fish Marinated With Tomato Caper Paste Recipe

 

This tasty Fish and Tomato Caper dish cooks up quick and can be prepared on the barbecue.

 This dish can also be prepared in your oven. It's an upscale dish that's really easy to make. In addition to that when you use Jake's Basil Marinade you get this nice Rosemary, Tarragon flavoring with a little spice kick behind it...exceptional!

Serving size: Serves 6
Cooking time: Less than 30 minutes

Excellent for fish, chicken, beef, lamb.

Fish is best marinated for no more than 20 minutes. Recipe is best cooked just before serving.

INGREDIENTS
¾ cup mayonnaise
cooking oil spray
6 thick firm white fish fillets

TOMATO AND CAPER PASTE
¼ cup tomato paste
2 cloves garlic, crushed
2/3 cup capers, rinsed, drained
2 teaspoons fennel seeds, toasted
1/3 cup extra virgin olive oil
1 small red chili, finely chopped
2 tablespoons fresh dill leaves
4 oz Jake's Famous Asian Style or Maple Bourbon Marinade

Instructions

TOMATO AND CAPER PASTE: Blend or process tomato paste, garlic, capers, fennel seeds, oil, chili and dill leaves until almost smooth.

Combine ¼ cup of the Tomato, Caper Paste and Jake's Asian or Maple Bourbon Marinade with the mayonnaise in a small bowl.

Line an oven tray with foil, spray with cooking oil spray.

Place the fish on the prepared tray; spread the remaining Tomato and Caper Paste on top side of fish. Cook the fish marianted under a preheated grill or covered barbecue until the flesh flakes and is just cooked through.

Serve fish with green salad, lemon wedges and the mayonnaise mixture.

Fish marinated in tomato caper paste recipe is a wonderful dish with savory and sometimes salty green capers combined in a rich tomato paste blended and coated on fish.  The use of white fish although generic utilizes a very neutral fish that is firm when marinated and cooks and absorbs the marinade extremely well.  We use the white fish and the marinades and produce an ultimate meat when combined with capers, tomato paste, olive oil, dill and more. The fish is then cooked and the sauce coated on top of the fish for presentation to produce the ultimate in flavors.  

I've used this dish multiple times at catering events where we set out to create a memorable evening for our clients.  The fish marinated in advance and the marinade coating sauce is prepared in advance as well.  We warm the two items separately and combine over each dish prior to the guests sitting down.  The dishes are completed with broccoli or mixed vegetables and a bread dipping sauce is placed alongside the table.  In addition to the fish marinated and caper sauce we add a fluffy mashed potato mix to which we top with a little caper sauce and some homemade brown gravy.  

Someone once asked me if you could replace the capers in tomato paste with another vegetable.  After some consideration I told them I'm sure you can find an alternate to round out the sauce.  I might blend some spinach and olive oil which would be combined with the sauce along with some dill.  I think this combination would offer a fresh, creamy replacement for the capers if you desire.
