Barbecue Chicken Breasts Recipe

 

Smokehouse BBQ Chicken Breasts and Grilled Mushrooms made traditional Style

Ingredients for BBQ Chicken Breasts

  • 1/4 Cup Cilantro - Chopped
  • 1/4 Cup Green Onion - Chopped
  • 2 T Ginger - minced
  • 1/4 Cup Orange Juice
  • 1/4 Cup Oyster Sauce
  • 1/4 Cup Rice Wine
  • 2 T Honey
  • 2 T Sesame Oil
  • 2 T Chili Sauce
  • 1 Cup Jake's Original Barbecue Sauce

Chicken and Mushrooms

  • 4 Chicken breasts - Whole with Skin,
  • 1/ Pound Mushrooms - Shiitake or Portabello
  • 12 Tortillas - Corn or Wheat
  • 1/4 Cup Hoi Sin Sauce

Combine all barbecue sauce ingredients in a bowl and stir well. Marinate chicken in half of the sauce for at least 15 minutes but not longer than 2 hours. Clean mushrooms and cut into sliced strips.

Grill Chicken (skin side down) over medium heat for 6 minutes. Brush with marinade, turn and grill other side for another 6 minutes or until centers are no longer pink. Cut into strips. Meanwhile, brush the mushrooms with the reserved marinade and grill until they soften, about 3 minutes per side. If using Portabello mushrooms, cut into strips.

Serve BBQ Chicken Breasts Recipe using warmed tortillas, or Chinese wrappers, chicken, mushrooms and Hoi Sin Sauce for guests to assemble.

BBQ Chicken Breasts and Camping Trips

Recently while on a camping trip near the Sequoias in Central California some friends and I thought we would set out to grab our limit of bass and trout.  We'd planned this trip for some time gathering all the necessaries like toilet paper, oil for cooking, dried fruit bags and jerky.  With some degree of over confidence believed that on the first night of our trip we would be literally smothered in fish from the days catch.  As is the way of the world our hopes were dashed when only one of us managed to bag barely a keeper for all the effort we put in.  Because we had for such a haul three of the four of us didn't bring anything except
dried nuts and berries to round out the protein and energy we thought we might need.  

We sat there head in hands ruminating over the days losses.  At that moment one of our members blurted out that he had gone against the standard camping convention we all believed in and brought frozen chicken breasts.  We said "what, chicken breasts" and he said yes and said by now they've thawed out.  I thought by some stretch of the imagination if we hadn't brought in the load of fish we expected we might need this back up chicken to tied us over. And if we had brought in the fish then I would use the meat on the hooks as bait.  We all rejoiced because we knew we not need to go somewhat hungry at that point.  

Jack again surprised us with another item he brought on the trip.  Of all things he'd brought a small container of our Jake's Famous Really Good Mild BBQ Sauce. He said, hey...just in case the whole fish thing didn't work I didn't want to be caught short with just salt and pepper. We all slapped him on the back and thanked him for going beyond our traditions to bring the sauce and the breasts.  We pulled out the oil and got the pan ready and along with the oil we had some butter that was added to the pan.  We seasoned the breasts with salt and pepper and began cooking the breasts.  We sliced the meat into strips to ensure that there was enough for every. And man it was amazing as we added some avocado and some lime juice over the breasts.  We had a couple of small potatoes that we used in the pan along with the chicken.  And while the chicken was cooking we layered on some of the Really Good Mild BBQ Sauce.  This was a watershed moment as the rich aroma filled the air.  We became a little concerned that our smells might waft so far as to invite unwanted critters like bears and coyotes.  We kept a sharp eye out and took turn keeping watch over the camp and the food stuffs.  There was one last surprise that Jack had in his pouch and that was a container 
of Jake's Famous Chicken Rub.  Glory Be it was fabulous and fantastic all at the same time.  The chicken rub seasoned bits of our chicken added this well rounded savory flavor to the chicken.  Golden bits of the breasts were tossed to and fro in the pan and the completed chicken was a sight to behold.

We thanked Jack and asked him if he had any more surprises that we weren't aware of and he said only one.  He said the surprise is that he was going to catch more fish than any of us because he knew where the best fishing spot was.  Shaking our heads we said...that's a bold statement...just before we crawled into our tents for the night.  The next day Jack almost proved himself right.  He reached his fish limit before any of us.  But over the next few days he came in second and had to eat some of his words.  But we let him slide because of the awesome chicken breasts he brought on the first night.  As for me I will always remember the great times we had on that trip.  And stuck in the back of my mind is this great image of my friends and I barbecuing over an open flame in the Sequoias as we enjoyed the great outdoors.  If you're planning a camping trip to the mountains, parks or even in your backyard make sure you fill your nap sack and camping bags with Jake's Famous BBQ Sauces and BBQ Rubs.
