This BBQ Chicken Rub seasoning is built on a firm foundation of natural garlic, parsley, smoked salt, spices, chili powder, turmeric, and rich hints of brown sugar that make grilling quick and easy. Easy Chicken Quarters Recipe:

Here's a simple and easy recipe for Chicken Quarters that I use practically 3 times a month.  Just follow the steps for best results. 

Locate 3 or 4 good size Chicken Quarters which includes the leg and thigh portion attached.  Consider that this recipe will take at least 3 - 4 hours.  If the Quarters have been thawed first wash them to remove any debris.  Pat them dry with a paper towel.  Now add some standard yellow mustard.  The mustard does not need to be the fancy kind in fact the less expensive the better.  Coat each Quarter completely then place on a dish or in a container and place in the fridge for about 2 hours.  The mustard pre-marinates the chicken adding tenderness and a little bit of tartness.  After two hours add the California Chicken Rub.  Shake the rub on generously turning the quarters over to ensure you've got the meat covered.  Now place the quarters back in the fridge for 1 more hour.  At the end of the hour remove the quarters and hold them on the kitchen counter.  This will allow the meat to come to room temperature for grilling. 

I use a Charcoal grill so for me I would get my grill ready by positioning the charcoal around the grill as if to make or follow the snake process.  If you haven't seen the snake method you can click here to see that page and video.  Once the coals have ashed white take the quarters and lay down a sheet of aluminum foil to cover under all of the chicken.  So now we have the grates of the grill covered by the foil and the chicken laying on the foil.  Ensure that you grill vents are wide open on the top and bottom.  Place the lid on the grill.  Allow the chicken to grill for at least an hour.  Remove the lid, rearrange the foil with the chicken to move it away from the highest heat source.  The snake method allow the heat to follow the charcoal in a line around the grill.  So you'll move the chicken away from the heat.  Now, check the foil as it may have a lot of melted chicken fat on the foil.  Remove any excess liquid chicken fat.  At this point I like to turn my quarters over and continue cooking however, you may choose to continue cooking on the same side as the skin of the quarters will get crispier when the skin side is up.  Check the temperature of the chicken before determining to continue cooking.  Use your meat thermometer to check for 165 degrees or higher.  If the temperature is reached remove the chicken into a container and allow the chicken to rest for at least 5-8 minutes before serving.  

That's my easy to use recipe.  Also, if you're using charcoal and have removed the chicken immediately close the vents on the grill bottom and top.  This will snuff out the charcoal so that any unused charcoal can be reused for your next barbecue.
