Recipe Buffalo Catfish Bits:
- 2 Catfish Fillets at room temperature
- 3/4 Cup Fine Corn Meal
- 1 teaspoon Paprika
- 1 teaspoon Garlic Powder
- 1 teaspoon Fine Black or White Pepper
- 1 Cup of Milk
- 1/2 teaspoon Table Salt
- Peanut or Vegetable Oil for Frying
- 1/2 Cup Jake's Famous Buffalo Cheese Wing Sauce
Mix Corn Meal, Salt, Paprika, Garlic Powder, Pepper, and Milk together to make a dredge. Cut Catfish into sections about 1 to 2 inches long each. Dip Catfish bits so that all sides are covered with the mix. Heat oil to 360 degrees. Once oil reaches temperature slowly lower the Catfish bits into the oil to reduce spatter. Cook for 7 to 8 minutes until batter is golden brown and fish is done. Remove fish and place on paper towel for drainage.
Take the 1/2 Cup of Jake's Famous Buffalo Cheese Wing Sauce and place in a metal bowl or similar large enough to hold all the fish bits. When fish has drained remove from the paper towel and toss in Jake's Buffalo Cheese Wing Sauce. After all bits have been coated remove from the bowl and place on a serving dish. Add blue cheese dressing on the side and celery sticks to compliment.
Serve Buffalo Catfish Bits with celery, Jake's Buffalo Wing Sauce and chips or fries.
