How Marina and Dan use our Best BBQ Rubs Tri Tip, Steak and Rib Rub and Pure Santa Maria Dry Rub

Marina and Dan have been grilling meats since each was a child.  Although they grew in different parts of the country each can vividly recount their memories of their first steaks and their first tri-tip roast.  For Marina it was an unlikely event and spur of the moment barbecue when one of her relatives came in from California.  The family had just about barbecued everything imaginable because her father was a hunter, a man who believed in eating off the land being self-sufficient and never having to count on the kindness of strangers for their existence.  So when their Uncle Jack came in from Central California they wanted to honor him.  He hadn’t been in their city for almost 6 years and while he’d been away far too long his presence always signaled something special was about to happen.  

Marina’s Dad and Uncle set out to find something special at a nearby butcher’s.  Marina then only 11 was guided by the hand of her father to their local butchery a place they’ve been going for many years when seasons change and hunting moves into the off season.  Sol the butcher recommended a steak, ribs or maybe a ham.  But Uncle Jack asked Sol if he’d ever heard of Tri Tip roast. Sol, shook his head yes and said I’ve tried to tell people over and over about these roasts but no one seems to understand just how simple and tasty they can be.  So Jack said give me your best 3-4 lb roast.  Marina’s dad David said sure why not and Uncle Jack assured him that they would never regret the choice.  He said in Central California Tri-Tip is the King of meats and all it takes is some basic understanding of just how to prepare the meat before roasting.  You’ll see he kept saying over and over, you’ll see.

Uncle Jack showed David just how easy it was to prepare and marinate the Tri-Tip Roast.  He used a simple yellow mustard to coat the entire roast then he wrapped it up. He then said Marina watch how simple this is first we marinate for about an hour then we add the seasonings tri tip rubs and rest for an additional hour.  I didn’t know it then but he used a special blend of garlic, pepper and salt saying this is the simplest formula that’s used every day on the Central Coast and when combined with the mustard and grilled the results will be awesome.  

Uncle Jack started our grill and just about 30 minutes later it was brought to just the right temperature for grilling.  David only used charcoal with wood.  He had some left over redwood oak which Jack shipped out months before.  The wood was perfect for the barbecue.  Jack used about 10 ounces of wood and said…now the magic begins.  He told Marina the meat is different from steaks and ribs and requires that we sear the meat before we cook it.  You must preserve the flavor by searing.  So, even though it looks wrong you must place the meat on the hottest portion of the grill and sear for 3-4 minutes a side, then move it off to the coolest portion of the grill and allow it to roast for the duration of the cooking.  He also said you must turn the meat every 25 to 30 minutes keeping in mind that each time you open the grill you will need to add that time back in during the cooking process.  

He said one thing that has always remained with Marina after the meat was cooked.  Marina, he said “You must allow the meat to rest”.  He said too often people cook a great steak or ribs and immediately cut into the meat and wonder why it was so tough.  He said the meat was tough because all the flavor inducing liquids drained out of the meat following the first cut.  By allowing the meat to rest the liquids are re-absorbed into the meat and the end result is a juicier roast.  

And after the meat rested and the family sat down to eat Marina remembers just how juicy and perfectly cooked was the tri-tip roast. Uncle Jack cooked the roast to Medium rare and Medium and the flavors were amazing.  That same memory is what Marina carries with her some 16 years later.  She and Dan with different memories each had their prized moments with tri-tip roast.

Here's how we make Tri Tip Roast.

To cook Tri-Tip follow these steps. Season your Tri-Tip with Jake's Santa Maria BBQ Rub . Allow Jake's Barbecue Seasoning Rub to marinate on the Santa Maria Style Tri Tip no less than 45 minutes before grilling. Barbecue grilling is the preferred method but your Tri-Tip can be oven cooked if desired. After seasoning and marinating place your Tri-Tip on the hottest part of the grill. Coals should be ashed over completely white before adding the meat. Sear the meat for 3-4 minutes per side. Once done move the meat to the coolest portion of the gill. Cover the grill with the lid and cook for approximately 15 minutes. After the 15-minute interval turn the Tri-Tip over and begin checking the Tri-Tip with a meat thermometer to determine the internal temperature, which in turn determines how well to cook the meat.

Consider applying the glaze while the meat is finishing the cooking phase which usually is around 15 degrees of completion.  Apply the Bourbon Glaze so that it fully covers the Tri Tip and allow the glaze to cook on for an additional 5 minutes, afterward turn and apply again. Coat the meat at least 3 to 4 times on both sides ultimately allowing the glaze to bake on for fifteen minutes or more. Once done allow the meat to cool for 2-3 minutes then go to the cutting board. The glaze can be reapplied to the meat one last time just before cutting if you desire. Follow the scale below:

  • 125 to 130 Degrees --- Rare
  • 130 to 140 Degrees --- Medium Rare
  • 140 to 150 Degrees --- Medium
  • 150 to 160 Degrees --- Medium Well
  • 160 to 170 Degrees --- Well to Very Well
