Jake's Famous Maple Bourbon BBQ Sauce


Maple Bourbon BBQ Sauce is considered a staple in some parts of the United States.  While in others most people have never heard of Maple Bourbon BBQ Sauce.  Some years ago we decided to get in contact with friends and partners in the Southern part of the country.  We'd become focused on all things Southern from cooking styles and BBQ to cultural pursuits.  Since we were BBQ warriors in the trade we decided to focus on the connection and creation of a Southern favorite Maple and Bourbon combined together in a BBQ Sauce.  How could we resist the inner warmness of rich flavored Bourbon combined with the flavorful fullness and subtle sweetness of Maple sugars formed into syrups.  The combination of Maple and Bourbon was almost too luxurious for simple BBQ Sauce but when paired with pork ribs or shoulder it was hard to see how the two could ever be separated.  Maple of course has been around for hundreds of years and just as long for Bourbon.  Bourbon is and alcoholic spirit that is distilled from fermented grain mash very similar to beer making and can include varieties of wheat, rye, barley or corn.  Finally this spirit mixture is aged in wooden barrels to give it character and flavoring from the wood.  Maple on the other hand is derived from the sap or the xylem of a sugar maple tree.  It is made up primarily of sucrose a form of sugar and water with small amounts of monosaccharides and fructose derived from the chemical change that occurs during the boiling process. Once cooled a second change takes place and result is a smooth and natural maple syrup. 

The balance between the complex flavors of Bourbon and the simplistic natural chemical changes of Maple is uncanny.  When both are added to a natural base of tomatoes, garlic and onions such as in BBQ Sauce then the end result is heavenly.  One whiff of this aromatic concoction and one is mentally transformed through images of the Old South on a Sunday afternoon while some sip Mint Julips on the Veranda.  As a flavoring component Maple and Bourbon have been known to reach deeply into the very essence of meats to deliver a warm natural flavor with subtle hints of sweetness. 

Now a discussion on Jake's Famous Maple Bourbon BBQ Sauce would not be complete if we didn't answer the primary question of do we actually use Bourbon Whiskey and real Maple Syrup in our BBQ Sauce?  In our first few development batches we found that this natural combination was compelling to say the least but Bourbon Whiskey will vary depending on where it's made and also by who made it.  Some will age in wood barrels while some will age in steel.  In addition we found that Maple will change depending on the rain cycle and if its a wet year versus dry year.  For the purposes of consistency and the fact that so many customers were concerned about the use of active alcohol in sauces we chose to use Natural Flavors.  We've found we can achieve greater consistency without any challenging effects when natural flavors are used.  The quality of the product Maple Bourbon is driven by taste and aroma.  After spending months working on the formula we are able to achieve very similar levels of warmth and aroma within 5% of the original products.  When combined with a tomato bbq sauce base the results are indistinguishable from original forms of Maple and Bourbon.  This is all great news for us because we are better able to produce a product that is consistent and delivers the same level of flavor in each batch.  

Once made we found that Jake's Famous Maple Bourbon BBQ Sauce is best paired with BBQ Baby Back Ribs and Chicken along with Pulled Pork.  These three meats forms carry the flavoring of Maple Bourbon far better than say turkey or fish.  Secondary pairings we would consider Lamb or steaks.

Thinking about having ribs and Jake's Famous Maple Bourbon BBQ Sauce but you don't have access to a problem. Jake's Famous Maple Bourbon BBQ Sauce for baby back ribs will work wonders in the oven.  Ribs will come out nice and moist with just the right amount of caramelizing.  The steps are simple and included here.  Just select your baby back ribs along with Jake's Famous Maple Bourbon BBQ Sauce and Jake's Tri Tip, Steak and Rib Dry Rub.  To achieve maximum flavor it's a good idea to properly address your ribs.  Meaning the best ribs have the silver membrane removed from the curved side of the rib bones.  The best way to do this is after the ribs have been properly cleaned and patted dry take a paper towel and grasp an edge of the silver membrane starting at the top of the ribs.  By grasping an edge and pulling toward the other end of the meat you'll start to see the membrane separate from the meat.  The first few times you pull on the membrane it might appear slippery and may fold back, no matter keep pulling with increased force and the membrane will come off easily.  Some say that it's best to remove the membrane while it's cold I like doing it just after cleaning as the membrane is more pliable. Once the membrane is removed rub the ribs generously with the dry rub and wrap with foil.  Let the ribs rest in the foil for about an hour.  Set your oven to 350 degrees.  While the oven is reaching temperature set the ribs on the counter so that they come to room temperature.  Place the ribs in foil in a metal baking pan.  Cook for about two hours and remove from the oven.  Open just the top of the foil and lather on Jake's Famous Maple Bourbon BBQ Sauce for Baby Back Ribs covering both sides.  After the sauce is applied leave the ribs on the meat side up with the foil open.  Turn the oven to 400 degrees and cook for approximately 15 to 20 minutes at 400 degrees.  The additional heat will create a caramelizing effect on the top of the ribs.  Once done remove the ribs and cover allowing the ribs to rest for about 20 to 30 minutes.  Keep some extra Jake's Famous Maple Bourbon BBQ Sauce on the side in a warm dish then serve and enjoy.  Additional pairings of coleslaw, corn on the cob and baked potatoes will really make this meal stand up.
